  1. Soak the rice in water for 30 minutes.
  2. Heat ghee in a large pan and add the whole spices (bay leaves, cloves, cardamom pods, and cinnamon stick).
  3. Add sliced onions and sauté until golden brown.
  4. Add ginger-garlic paste and sauté for a minute.
  5. Add chicken and cook until it changes color.
  6. Add red chili powder, turmeric powder, garam masala powder, and salt. Mix well.
  7. Add 4 cups of water and bring to a boil.
  8. Drain the water from the soaked rice and add it to the pan. Mix well and cover the pan with a tight-fitting lid.
  9. Cook on low flame for 20-25 minutes or until the rice is cooked.
  10. Remove the lid and fluff the rice with a fork.
  11. Serve hot with raita or salan.
